Potato Corn Pancakes

We had a bbq yesterday and there were lots of leftovers – mostly baked potatoes and corn.

Instead of just eating them the same way, I decided to turn those things into pancakes/patties. 

So I mashed the potato roughly and took the corn off the cob, and mixed them with an egg, some panko, paprika, garlic powder, dried parsley, salt and pepper.

After forming into patties, I baked them in a 375 oven for 25ish minutes – flipping halfway.

They turned out really well and held together quite nicely.

I love turning leftovers into new things.
