Dinner was a little random but turned out delicious. I had a couple of my chickpea veggie burgers (Chickpea Burgers Recipe) still in the freezer so I decided to make them into a filling for soft tacos. (Side note: I have to play around with the veggie burger recipe cause every time I made them, they crumbled – I guess I need to add more moisture next time).
I cooked it all up and put it on some lettuce in my small tortilla and just put some sweet and spicy mustard on top.
And on the side, I just have some coleslaw and corn which are perfect for the summer.
