I know yesterday was grilled cheese day but I was kind of craving mexican food. I made this awesome chicken fajita bowl with sauteed peppers and onions, rice and beans and a little lettuce and tomato.
I used cooked rotisserie chicken and mixed that with peppers and onions in my pan then I seasoned all that with a delicious homemade taco seasoning (cumin, chili powder, paprika, oregano, cayenne pepper, garlic powder, salt and pepper).
The only thing that was missing from this meal was some chopped avocado on top. It was super yummy though, and very colourful and filling.
