No these are not fancy french macarons, these are delicious classic coconut macaroons. I was tired of just being sick and I got back in the kitchen, like I mentioned in my last post.
If you like coconut, you will love macaroons. They are a classic passover treat but homemade is waaaaayy better than macaroons that come in a tin can. They are also super easy to make – you just mix everything in a bowl, roll into balls and pop in an oven. Plus, there are only 5 ingredients: shredded coconut, ground almonds, sugar, couple eggs and a pinch of salt.
When you take these out of the oven, they are slightly crisp on the outside but they are soft and chewy on the inside. They’re so yummy and definitely made me feel a little better.
