I love salads. I’m sure I’ve said that before, but this salad was better than I thought it would be. My dilemma is usually trying to figure out what kind of dressing to put on my ingredients – what actually goes in the salad is easy for me.
This time, I had some shredded carrot and chickpeas in a bowl. I have this curry powder spice blend so I wanted to use that. I mixed about a tablespoon of that spice mix (you could substitute this with 1 tsp curry powder too) with 1/3 cup sour cream, 2 tbsp of mayonnaise, 1 tbsp lemon juice and a pinch of salt and pepper. You could also add a touch of sugar to round out all the flavours if you want. Once that was all mixed, I just poured it over the carrots and chickpeas and mixed until all combined.
The dressing would be a great dip on its own – for pita, veggies, anything really. I love the flavour of curry and it was so fresh in this salad.
