I got inspiration from a couple websites online – mostly for the technique – but I pretty much made up this recipe myself.
So first I made the meatball mixture: ground chicken, egg white, flour, garlic, basil, oregano, parsley, salt and pepper. Once that was all mixed, I browned them in the instant pot. This process was a little messy at first because ground chicken is so wet. But after they started cooking a bit, I was able to turn them and brown on all sides.
Once they were all browned (and by no means cooked through), I put some garlic and chopped onions as well as lots of spices – same ones as in the meatballs. Then I poured in a jar of tomato passata and about 1/2 cup of water. Then I just set the instant pot to manual, low pressure, for 10 minutes.
The house smelled so good. They turned out delicious. The meatballs were moist and juicy and so flavourful. I served it on some cooked pasta. So good.
