I wanted a nice pumpkin pie, but at the same time, I wanted it to be healthyish. I was successful in finding a recipe! Chocolate Covered Katie (Crustless Pumpkin Pie) made this crustless pumpkin pie and I had to make it too.
It was pretty easy to make and I followed the directions exactly as written – I had full faith that the recipe would turn out well, and it did!
It almost is a cross between a pie and a custard which I loved. And it is pretty guilt free which is amazing for desserts.
