I love eating fruit but I’m not such a fan of it in pancakes – I just don’t like when you bite into it and it kinda explodes in your mouth. So I thought it would be a good idea to blend the fruit first then mix it into the batter. It added sweetness and made it a pretty purple colour.
I just made basic pancake batter and mixed in pureed raspberries and blueberries then cooked as normal. I probably could have put more fruit because they were not as brightly coloured after they were cooked. So keep that in mind if you want to try this out. Really good concept though and it’s a good way to sneak in fruit to give to your kids.
