I’m kinda digging cold tofu since I made it yesterday and really liked it (Veggie Stirfry with Cold Tofu). Today, I again just cut it into cubes but this time I made a little dressing out of this delicious spicy/sweet pepper sauce that I got and olive oil and a touch of maple syrup. I mixed all that up and coated the tofu.
I also had leftover roasted carrots and sweet potatoes and I chopped some avocado – for creaminess and colour – and put everything in a bowl. It was a very yummy bowl with lots of contrasting flavours and colours which was nice.
And I’m pleased to say that this meal was much more satisfying than yesterday’s. If you’ve got any tofu ideas (hot or cold), please let me know! I’m always trying to expand the possibilities.
