This meal started off as leftover salmon and roasted veggies and became a delicious couscous bowl with added boy choy and corn.
I just threw the veggies in a pot to warm them up then I added the book choy, corn and broke up the salmon into bit sized pieces. To season it all, I put a splash of teriyaki sauce and sriracha.. that’s it!
When all that was hot, I put it on a bed of couscous.
It took like 10 minutes to put this together, such a yummy meal.
