This was a pretty guilt free dinner and it was super colourful (it was brighter before I doused it in delicious peanut sauce but still, the colours were there haha).
So on the bottom there is a mix of ramen noodles, spaghetti squash and romaine lettuce. Then on top of that, there’s carrots, cucumber, chickpeas (3 C’s), along with simple canned tuna.
Then on all of that, like I mentioned before, I made an awesome peanut butter sauce – peanut butter, water (to thin it out), soy sauce, maple syrup, powdered ginger and sriracha. Such a good sauce and I make (and post) it all the time.
