Roasted Vegetable Couscous Salad

Got home after work and I really just wanted to eat something healthy, delicious, and most importantly fast.

I chopped some zucchini and bell pepper, tossed them with oil, salt, pepper and oregano and roasted them for about 15 minutes.

While that was going, I chopped some olives and tomatoes, then made 1/2 cup (raw) couscous. I also made a easy dressing – olive oil, apple cider vinegar, lemon juice, maple syrup, salt, pepper, chili flakes, oregano. 

After the veggies were done, I let them cool down a bit, then I combined everything in a big bowl. I also added chickpeas, kind of as an afterthought – just to add some more protein.

This was a good dish, super flavourful. And I’m not usually one to roast vegetables before putting them in a salad, but they were so good! I would definitely recommend roasting veggies instead of just putting them in raw.
