Vegan Shepherds Pie

Fall is a time to make delicious meals that really warm your heart – this was one of them. I made a fantastic shepherds pie, using veggie ground meat and leftover mashed potatoes.

The “meat” filling is started with sauteed onions and carrots, then I added a bit of ketchup for some tomato-y-ness. Then I added the veggie meat, chopped tomatoes and a splash of water. After it cooked down for a couple minutes, I seasoned with salt, pepper and thyme then added frozen peas, mixed it up and spread it in a casserole dish.

Once it was in the dish, I put a layer of corn kernels then topped it with the leftover mashed potatoes. Popped it in a 325 degree oven for about 30 minutes and it was perfect.

Such a nice and homey meal, I can’t wait to make more fall meals like this one.
