I love little energy bites/cookies and it turns out that quinoa makes the perfect base. I had some leftover cooked quinoa from the dinner I made the other night (Mexican Tortilla Lasagna) and I mixed in other yummy ingredients then popped them in the freezer for a quick treat.
To the plain quinoa, I added peanut butter, bananas, craisins, coconut, oats, shredded coconut, cinnamon and vanilla.
After it was all combined, I made little spoonfuls and put them on a tray and put them in the freezer to firm up. Once hardened, they can be stored in a container in the freezer. I had a little extra quinoa mixture that I didn’t freeze which was delicious just like that – it would definitely be good for breakfast.
