Dinner tonight was super simple and this would be a delicious meal any time of day.Quiche is easy to prepare, especially when you use a frozen pie shell, like I did. Once you have the crust, all that’s left is filling it with some veggies, cheese and meat (I kept mine vegetarian but you could definitely do otherwise), then pour your egg mixture (eggs, milk and seasoning) on top and bake in a 375 oven – mine took about 35 minutes to cook, but if you have more egg filling, it’ll take longer. The key point is to make sure it doesn’t jiggle when you shake the pan.
My quiche had asparagus, cherry tomatoes and mozzarella cheese but you could use sauteed peppers and onions, frozen/drained spinach – the options are almost limitless.
Love the combination of tomatoes and asparagus!
