Thai Spiralized Zucchini Salad

I almost forgot that I had a spiralizer cause I haven’t used it in so long.

I made a really nice thai dressing to put on my zucchini noodles. It had peanut butter, soy sauce, sesame oil, ground ginger powder, lime juice and sriracha.

I added some carrot slices for extra crunch, but also some peanuts and sesame seeds for more texture.

It was a really good lunch and quite satisfying. I have a couple other zoodle salads on my blog but I think this one turned out the best, in my opinion.
