Asian Chicken Meatballs, Roasted Veggies and Salad

I haven’t made a full meal like this in a long time. The main protein was these chicken meatballs which turned out really well. The actual meal mixture was just ground chicken, an egg, panko bread crumbs, grated ginger and sriracha. I made meatballs and baked them for about 15 minutes. After that, I brushed a mixture of peanut butter, sriracha, honey and soy sauce on top and put them back in for 10 more minutes. 

The roasted veggies were potatoes, asparagus and onions. Very simply made with oil, salt and pepper; potatoes took 45 minutes, rest was 25ish.

Salad was cucumber and tomato with balsamic vinegar, honey, salt and pepper.

Everything was so good and you can see there was nothing really complicated about any of it.
