Hello! It’s been a really long time since I’ve made a post. I was away on vacation then I was a little under the weather, but now I’m back in the kitchen!
I made these black bean patties which turned out really well. They’re super easy and delicious. So you start by mashing a can of black beans (you could also do this whole thing in a food processor). To that, add finely chopped onion and bell pepper. Then, the seasonings were salt, pepper, cumin, chili powder and dried parsley. I also added some panko bread crumbs to soak up some of the moisture.
After it was all mixed, I put it in the fridge to set up a bit. I left it in there for about 30 minutes then I formed some little patties and baked them in a 400 degree oven for about 30 minutes – flipping gently halfway through.
They didn’t get as crunchy as I hoped, but they were still delicious. Quite satisfying, healthy, and guilt free!
Also, they can be a side dish but they’re great as the main protein of your meal too!
