Indian Turkey Curry

So this was a very impromptu meal. It started off as cooked turkey breastfeeding that was a little bit dry. Instead of eating it as is, I turned it into an indian curry. 

I started off by sautéing onions, carrots and peppers in a big pot. Then I added a few cups of chicken stock and brought it to a boil. While it was heating up, I added some spices (pepper, chili flakes, curry powder and turmeric). 

After it was boiling, I let it simmer for about 10 minutes, then I added the shredded turkey to let it heat up and absorb all the flavours. 

I realised it was a little too liquidy so I made a slurry with corn starch and water and mixed that in. I also added a splash of almond milk for a bit of creaminess (instead of adding super fatty coconut milk). Right before serving, I added some frozen peas which gave a pop of colour.

It turned out really well, not too spicy. I just served it on some brown rice and it was delicious.
