Roasted Red Peppers

I’ve wanted to make these for a while but I think I was too scared to try. I’m happy I did it though. And they’re super easy too.

If you’ve never roasted peppers before, they’re super easy. You just throw some peppers (whole, with seeds and all) on the grill and let them cook. You want them to get burnt so that the skin starts to blister. They need about 15-20 minutes to cook depending on their size but you want to rotate them every few minutes so that they burn evenly. 

Once they are perfectly burnt and soft, you gotta take them off and pop them in a bowl (glass) and cover it immediately*. This is to steam them. This helps the skin come off later. Basically leave them alone for another 15 minutes. 

After that, you can peel and take the seeds out. This part is a little messy but it’s relatively easy to do. It’s fine if there are little pieces of skin and some seeds that stay in. Then I just sliced them up and popped them in a mason jar. I added a little salt and red wine vinegar and shook it up a bit.

Now they’re in the fridge and ready to eat whenever. I’m excited to put them on anything. 

*I put them in a pot and put the lid on it
