Sweet Potato Avocado Toast

This is one of the simplest things ever. It’s really not much more than what the title says. It was just toast + avocado + sweet potato + sriracha. That’s it. While it may be simple, it was delicious and nutritious. I had this for breakfast (plain avocado toast is one of my faves), but the sweet potato almost turns it into a lunch – I could eat it any time of day though haha. It was such a good meal. It’s creamy and crunchy and sweet and just plain yummy.

I know it might seem like a weird combination to add the sweet potato to such a classic thing like avocado toast, but it really works.

If you wanted to add a little more texture, you could put some sliced cucumber on top. But for me, I think the crunch of the perfectly toasted bread gives a nice amount of crunch already.

What you need:

  • 1 slice bread, toasted (I love using hearty grainy bread)
  • 1/2 avocado, mashed
  • 1/4 cup sweet potato, mashed
  • sriracha, to taste
  1. First spread avocado on the toast, then lay mashed sweet potato on top. Drizzle with desired amount of sriracha. Eat immediately or else the bread will go soggy.
