I may have said this before, but I love meals that are all in one bowl and easy to eat. Tonight’s dinner was just that.
I have 3 components here which are pretty easy to see cause I made sure they were all separated in my bowl.
The bean salad has a few things… black beans, chickpeas, peppers, corn, green onion, lime juice, maple syrup, oregano, chili powder, cumin, salt and pepper. I actually added sriracha after cause I just wanted that extra punch.
For the sweet potatoes, I cut them up into pieces and roasted them for like 45 minutes. I coated them in olive oil, salt, pepper, chili powder and paprika. After so long in the oven, they were getting super sweet and almost caramelized.
The couscous was so basic. I just cooked it then mixed in some olive oil, salt, pepper and oregano.
So all the things had their own flavours but when you get a bite with everything, it’s just so goood.
