Making mexican food the day before Cinco de mayo was a great way to show my rebellious side.
I was originally going to make chili cheese fries but it ended up just being a bowl of chili with some fries on the side. Now that I think about it, it ended up being pretty much the same thing. Whatever you call it though, it was delicious.
The chili was actually vegan since it was just soy meat, veggies and spices* but the sour cream and cheese ruined that. If you wanted to keep it vegan, you could get dairy free cheese and sour cream – they are good, I’ve tried them before.
The sweer potatoes were just coated in oil, salt, pepper and chili powder. I baked them for about 30 minutes. I would’ve liked them to be more crispy but were still tasty.
