I was in the mood for a light dinner, so I made a nice and healthy salad with quinoa. I cooked it up then added some frozen corn and edamame afterwards and thawed them with the residual heat. I let that cool down then added olives and cucumber. I made a little dressing of olive oil, red wine vinegar, honey, oregano, salt and pepper.
This was a super easy meal that had a nice balance of sweet, salty and crunchy.
