Colourful Roasted Veggies

I just want to start my mentioning that I know I have a lot of vegetarian/vegan posts, but it’s just a coincidence. I do eat meat but sometimes it’s just more convenient and easier to not use it. But for all you carnivores, you could likely very easily incorporate meat into any of the things I’ve made.. if you have some questions about how, I’d be glad to help!

Now that I said that, let’s get on with this current vegetables situation. There were so many veggies in my fridge and I immediately just thought to roast them all. So I did. Carrots, potatoes, broccoli and asparagus. Tossed with olive oil, salt and pepper. Roasted the potatoes/carrots for 45 minutes and the broccoli/asparagus for 30 minutes at 400F.

I served all the veggies with an awesome peanut sauce (peanut butter, rice vinegar, soy sauce, sriracha, honey).

Super simple but the peanut sauce made it a little more than just a bowl of vegetables.

P.S. in case you were wondering, the veggies in my picture are raw – so before I popped them in the oven. The colours were just nicer this way.
