Quinoa Stuffed Peppers

For some reason, there were like 8 bell peppers in my house so I thought ‘why not make some stuff peppers’. So I did.

I found this recipe online from Minimalist Baker (link here) and it looked really good and I was super happy cause I had pretty much had everything it called for.

I did make a few changes though:

  1. Used 1/2 cup fresh diced tomatoes (instead of prepared salsa)
  2. Used 7 smaller bell peppers (instead of 4 large ones)
  3. Put ground veggie meat in the filling so I reduced the amounts of other things – reduced quinoa to 1/2 cup and black beans to 10 oz)
  4. Added 1 tsp oregano and 1/4 tsp chili flakes to filling

So I didn’t make such huge changes, I just added my own spin. Once I finished filling my peppers, I had a lot of extra filling (like 2 cups) so I guess I’ll be eating that tomorrow.. Good thing it tastes really good on its own.

These turned out really well. I love the pop of the avocado and extra diced tomato on top too!
