This is just an awesome meal, super filling. I guess you could say it’s in between a soup and a chowder.
Pretty simple and healthy, which are two things I love.
Start by sautéing chopped onions then add chopped sweet potatoes (and carrots) and start to cook them. Then add chicken broth, shredded cabbage (I used coleslaw mix) and hot sauce. Let that cook down for about 20 minutes until the potatoes are almost tender. Then add cooked chicken (I had rotisserie chicken) and let it cook for a few more minutes to heat up the chicken.
And now, here’s where it gets good. First make a little slurry of water and flour and mix that into the pot. Second, add peanut butter. It might sound weird to add those things but they thicken the mixture and make it super rich and creamy. Also added some frozen peas for a pop of colour.
Just need that to cook for a couple more minutes then it’s ready to serve.
