Banana Pancakes

I still had more bananas that were going bad, they were definitely quite ripe. I also had some eggs to use up. I remembered that mixing the two together magically makes pancakes.

I used a recipe that I found called flourless banana pancakes (on paleoleap.com) that added a few extra things to the ‘batter’ – baking powder, vanilla and cinnamon. I also could’ve added nuts or fruit but I kept it that simple.

I like these pancakes because they are so easy and almost guilt free (no flour, no dairy). The only thing is that they are so delicate so you have to be VERY careful when flipping them.

I made a single batch of this recipe and I got about 12 small pancakes. Perfect for one person.
