Asian Lettuce Wraps

I haven’t been eating the healthiest so recently because I was out of town (I know, not a good excuse, but it happened). I really wanted to get back to it and make something super fresh and delicious for lunch today.

I made this little mixture of edamame (I actually love soybeans), carrots and radish, and mixed that with sriracha, sesame oil, soy sauce and honey. That on its own would’ve been an awesome salad to eat, but I took it one step further and spooned it into lettuce leaves and sprinkled them with black sesame seeds and chopped peanuts. They were a little messy to eat but super good.
