This was a really nice and well-balanced dinner. So the rice was just cooked in vegetable stock, then I added kale and peas for colour (and salt, pepper and chili flakes).
The Greek salad was tomato, red pepper, kalamata olives and feta cheese with a simple dressing – red wine vinegar, honey, salt, pepper, oregano.
The meatballs are made with soy meat so they are vegetarian. There’s lots of stuff in them like onions, parsley, oats, eggs, cheese and seasonings. I know it sounds like a weird mixture of ingredients but they turn out really well. You won’t even miss the meat.
