Chickpea and Carrot Salad with Peanut Dressing

I got this new jar of natural peanut butter (no added oil, salt or sugar) and I was excited to put it in everything I could. There was nothing really special about the peanut butter itself but I like peanut butter so this lunch was an excuse to use it.

I first made the dressing in a bowl: peanut butter, soy sauce, sriracha, sesame oil, lime juice. I also had to add a little water to thin it out.

Then I just added chickpeas, chopped carrots and shredded mixed lettuce. It wasn’t necessarily the prettiest salad but it sure was tasty.

Super healthy with carrots (vitamin A for eyesight) and chickpeas which have tons of protein!
