Wasn’t really sure what to make for breakfast this morning, but this was awesome – and it’s much better than normal scrambled eggs. Side note: what’s the difference between quiche and frittata? I think they’re similar, but I know they are both delicious.
First, you just sautee whatever vegetables you like (I did onion, kale and broccoli), and place that mixture in a greased pie plate/dish. Then in a bowl, beat eggs (I used egg whites to make it healthier) with any seasonings, I used salt, pepper and sriracha. Just pour that over the vegetables evenly, and place sliced tomatoes on top of that. Finish it with shredded cheese all over and bake for about 30 minutes at 400F. It’s done when it’s not jiggly anymore and the cheese is melted and golden brown. It was so good and filling.
Compared to a quiche you might get in a restaurant, this is so much healthier because it’s egg whites and there is no crust. So it’s pretty guilt free, depending on how much cheese you used (haha).
