I haven’t been eating the best recently so I tried to get back on track with lots of veggies. I made this salad with shredded zucchini and carrot, diced red pepper and edamame. The dressing is peanut butter, soy sauce, honey, lime juice and sriracha.
Two notes when making zucchini salads:
- squeeze out as much water as you can after shredding it
- keep your dressing thick because it will thin out after mixing with all the vegetables
This was a really good salad, it can be a main meal or side dish, you can add some protein.
I haven’t tried it but I feel like if you sauteed the veggies in a pan, then added the same dressing, it would make almost like a pad thai. So hot or cold, this would be a great dish.
