Mexican Bean Salad

To go with dinner tonight, I made this awesome bean salad. It started off with pretty traditional mexican ingredients, but then I took a little turn to make it my own. 

The salad is made of black beans, corn, bell peppers, edamame, red onion and parsley (normally, it would be cilantro in this kind of salad but I didn’t have any).

The dressing is olive oil, white vinegar, lime juice, sugar, salt, pepper, cumin and chili powder.

It was a super pretty and fresh salad. So easy too.
