Sticking with my green and orange, made this awesome and simple couscous dish for lunch. I started by just cooking some couscous in a pot. In another pot, I sauteed some kale to wilt it down, then added chopped carrots and chickpeas. I also added sliced olives for saltiness, a little olive oil and spices (oregano, chilli flakes, salt and pepper). It was a super yummy meal and very filling because of the couscous and chickpeas.
