Tonight’s dinner was super simple, one pot dish. It took about 40 minutes start to finish, including boiling the pot of water.
First I got the water boiling and chopped up my vegetables (onion, red pepper and collard greens). Then I just cooked the pasta, reserving about 1/2 cup of pasta water, and let it sit in the strainer while I moved on to the rest of the dish.
I sautéed the vegetables in a bit of oil, starting with the onions, then adding the peppers, then collards in the last few moments. I took all that out and let it sit in a bowl, so that I could cook the sausage.
So I had a couple sausages that I just cut up into bite sized pieces. I browned them until almost fully cooked, then added the vegetables back to the pot. I added some chili flakes, parsley, garlic and basil. I went lightly on salt because the sausage was a little salty on its own.
I added most of the pasta water to that mixture, as well as a little more olive oil to make a sauce. Then I just tossed the pasta with all of that until everything was well coated.
Super easy and nice and spicy, just how I like it.
