Beet Chips, Chickpea Salad and Couscous Salad

Tonight for dinner, I made some beet chips which are super easy. The key is to get them as thinly sliced as possible so that they cook quickly and get crunchy. You can make chips with any vegetables, it’s so easy. And they’re baked so there’s no guilt.

The chickpea salad has some avocado, mango and jalapeño for a little spice. The dressing is just like juice, honey, salt and pepper. Very refreshing.

The couscous salad has lots of greek flavours. The actual salad is couscous, cucumber, tomato and kalamata olives. The dressing is olive oil, red wine vinegar, honey, oregano, salt and pepper.

Two super easy salads and you can mix the different vegetables to create your own combinations. You could also add some feta cheese to the couscous salad if you wanted, I just didn’t have any.
