Day 4: Peanut Butter Oatmeal, Edamame Salad, Cauliflower Taco Lettuce Wraps, and Pickled Cucumbers

Today I tried to be a little more creative with my meal ideas. Breakfast was overnight oats made with almond milk and peanut butter. I also added some coconut for extra texture. i love overnight oats because they’re so fast and easy.

Lunch was an edamame salad. I mixed together some red onion, yellow bell pepper, carrots and corn, with a sesame, honey, chili flake and fresh ginger dressing – I actually had leftover peanut dipping sauce from yesterday’s dinner so I added those ingredients to it which made it super creamy and rich. I also put a few peanuts on top for extra crunch. It was really good and filling because of the soybeans. Those are a super healthy way to get lots of protein. Really good salad.

Dinner was mexican food. I made taco meat with finely chopped cauliflower (if you have a food processor, I would highly recommend using it – it took so long to do by hand). I mixed it with lots of spices, lime juice and a little honey. It tasted pretty good. I also made a little salad with corn and black beans. Then I had a few other extras: tomato, cucumber, olives and avocado. I put all that stuff in romaine leaves and it was super delicious.

I also made some pickled cucumbers and red onion. Super easy, no need to make a brine.I put the veggies in a jar and added vinegar, water, honey, salt and pepper. The longer they sit in this mixture, the better. I love pickles.
