I did some baking today, instead of studying, which is pretty typical for me to do. This was an awesome and easy recipe I found online from Cookie and Kate (http://cookieandkate.com/2015/healthy-banana-bread-recipe/).
The only adjustments I made were using almond milk to make it dairy free and i added walnuts. Also, the recipe calls for a 9×5 loaf pan, but I used an 8×4 and a 4×3. The big one took about 60 minutes and the small one took about 40.
They turned out really well and make sure you don’t go overboard with the cinnamon on top (like I did) cause otherwise it just looks like it’s burnt.
I make a similar recipe, the only difference being I like coconut palm sugar to sweeten. It has a lower glycemic index than honey or maple syrup (but they’re good too if you don’t use too much :). I’m sure that would work just as well in the recipe I used, but you would probably need to add a bit more liquid to counteract adding dry sugar
