Jam Sandwich Cookies and Apple Caramel Pies

I recently had a post about chocolate crinkle cookies, and here are more baked goods that were made. These were all for my grandma’s birthday party and these were only a small portion of all the variety of goodies.

The jam cookies are a nice shortbread dough flavoured with lemon zest, and raspberry jam in the middle. So you bake the cookies (half whole and half with a hole in the middle), then sandwich them together with the jam. You can easily use a different cookie cutter and make them as big or small as you like. Also feel free to use different fillings (other jam flavours, caramel, nutella). 

The apple pies have a super simple apple filling (diced apples, lemon juice, sugar, cinnamon) and some caramel. You put those on a circle of puff pastry and put another circle on top and use a fork to seal them together. And before baking, brush with egg wash and sprinkle with sugar. They were super awesome and flaky. I love puff pastry.
