Banana Oat Pancakes

This morning I was feeling a little adventurous so I tried to make pancakes without using a recipe. I’ve made pancakes many times before, using a recipe (here is one post: But today, I tried to do it by myself. I knew all the ingredients that I’d need, but basically I guessed measurements based on memory of past pancake-making.

Here are my ingredients and approximate amounts used:

1 1/2 cups whole wheat flour, 1/2 cup oats, 1/2 tsp cinnamon, 1 tsp baking powder, pinch salt

2 tbsp honey, 1 cup almond milk, 1 egg white (can use flax egg to make it vegan), 1 tsp vanilla, 1 mashed banana

Optional extras: 1/3 cup chopped walnuts, chocolate chips, shredded coconut

The process of making pancakes is quite simple actually. You just mix the first group of ingredients together (dry items) in one bowl and set that to the side. Then you mix the second set of ingredients (wet items) in a different bowl. Once you have your two bowls, you combine them together and add any extras (I added walnuts to mine). If you find that your batter is too thick, you can add a splash more almond milk, and if it is too thin, you can add a little more flour. So it is quite easy to fix mistakes. MAKE SURE YOU DO NOT OVER MIX YOUR BATTER BECAUSE IT WON’T BE AS FLUFFY AND AIRY.

To cook the pancakes, you heat up a pan, not too hot (medium-high) and pour 1/4 cup amounts for each pancake. This recipe ended up making 8-10 pancakes which is enough for about 2-3 people. But it also depends on how big you make your pancakes. This recipe can be easily doubled for more people. Enjoy!
