Veggie Frittata

This is breakfast. Frittatas are such a great thing to make but they’re so easy. You can put whatever you want in them and they are delicious every time.

So this one has potatoes, corn, peppers, onion, zucchini, tomatoes and cheese. You sautee all the veggies just to soften them a bit, then put it in a pie plate after cooling slightly. Season with whatever flavours you like, then scramble a few eggs and pour it over. Top with sliced tomato and cheese. It had to bake for about 30 minutes and make sure you let it cool a bit before serving.
