Sweet Potato Patties, Roasted Cauliflower and Chickpea Salad

I actually made these yesterday, but I was too tired to make a post. Anyways, so I had these baked sweet potatoes and I wanted to make something cool with them. I looked at so many recipes for croquettes and burgers, but nothing was really speaking to me. I finally decided to just try to make up my own recipe, and it actually worked out pretty well.

I mashed up my sweet potato in a big bowl, and added some oats (as a binder), diced onion and red pepper, and lots of spices (cumin, chili powder, paprika, dried parsley, chili flakes, salt and pepper). Once it was all mixed together, it tasted really good, but it was a little sticky because it was so wet. I put it in the fridge for about 20 minutes which helped a bit though. Then I formed little patties and placed them on a parchment lined baking sheet and also sprayed the tops with some oil. I ended up baking them for about 30 minutes, they didn’t really get crispy or anything, but they were delicious.

They probably would have turned out crunchy if I had coated them in panko or regular breadcrumbs, but I didn’t have any. However, I think this was a pretty good first attempt at making my own patty recipe.

I just served them with a simple chickpea and red pepper salad (lemon juice, oil, salt and pepper) and roasted cauliflower seasoned with chili powder. It was truly a simple and easy dinner but it tasted very good.
