I actually made this a few nights ago for dinner, and I totally thought I had finished the post, but I guess I didn’t for some reason. But here it is..
I found this recipe online for oven roasted chicken shawarma, which is basically just chicken breasts that marinate in this delicious mix of lemon juice, olive oil and so many spices, including cumin, paprika, cinnamon and turmeric. I actually reduced the amount of lemon juice I used because I didn’t want the acidity to take over. I let my chicken marry with those flavours for almost 2 hours (the recipe says that the longer you let it sit, the better), then you just pop it in the oven with some sliced onions (which I loved the most). It also said that to make it more like ‘official’ shawarma, you can turn on the broiler so it gets a little crispy on top. Usually I find chicken breast gets dry easily, but this recipe turned out so well. I was quite impressed, and will definitely make again. To go with the chicken, I made a few things. On the bottom, is rice that I flavoured with some of the same spices that were in the chicken, I thought it would compliment it well. I also made some roasted parsnips for sweetness and a simple tomato cucumber salad for crunch. It was a really nice middle-eastern style meal. Oh and because I can never get enough spice, I threw a bit of sriracha on the chicken (yes, I know it doesn’t belong with the middle-eastern theme, but it actually worked well together).
