Vegetarian Chili with Pita Chips

So tonight I made this super hearty chili with lots of veggies and soy meat, so it is perfect for meatless monday or any day really if you don’t eat meat at all. Chili is one of those dishes that is so versatile and you can put pretty much whatever ingredients you want. I put onions, garlic, bell pepper and zucchini. Once those are sauteed, you add the meat. You could have used ground beef or chicken too, but I used soy meat from Yves. Since this meat doesn’t really have to cook, I just broke it up a bit so it heats up faster. Then I added crushed tomatoes, a bit of water and tons of spices. I put lots of chili powder, paprika, cayenne, cumin, oregano, parsley, and some salt and pepper. I put quite a bit of cayenne and chili powder so it was a little spicy, but I served it with cheese and sour cream which balanced out the heat.

And for the pita chips I just cut pita into wedges, brushed them with oil then sprinkled some salt, pepper and chili powder. They got kinda crunchy and it was so good with the chili. This entire meal from start to finish took about 30 minutes which is great for a busy night.

Also for both of these things that I made, they don’t really need recipes. You can add whatever you feel and make it your own. That’s one of the things that I love about cooking. Freedom in the kitchen is so much fun and you can figure out what works and sometimes what doesn’t work.
