Since it’s passover this week, I’ve been eating a whole lot of matzo. So today for lunch I tried to switch things up a bit. Instead of putting tomato sauce and cheese on matzo and making like a pizza, I put those things on little cauliflower ‘steaks’. I know you’ve probably seen recipes for cauliflower pizza dough, but my way was so much easier and less of a mess. So I just roasted the cauliflower for a bit to get it tender, then I added the toppings and put it back in the oven until the cheese was nice and melted. They might not be the most visually-appealing thing, but they tasted really good. Also I’d like to think they’re much healthier than real pizza. I think it was a good effort to get out of the matzo-allday-everyday slump.
