There were a couple extra potatoes from last night’s dinner, along with the taco filling, so I chopped up the potatoes and heated everything up and made a hash kind-of-thing. Then just put a fried egg on top. It kinda broke in the pan, that’s why it looks a little messy. Served it with some ketchup and sriracha. Twas a good brunch.
